fix: hoist sharp for remix server runtime and drop patches from docker build

The remix server bundle externalizes sharp and resolves it from the
workspace root, but the lockfile left it nested under packages/lib.
Declaring it at the root guarantees the hoist. Also removes the
Dockerfile patch directory copies now that no patches remain.
